Rocket, Feta & Pine Nut Salad I’m a little bit obsessed with rocket lately and the Rocket, Feta & Pine Nut salad is so refreshing and is really quick and simple to make.

One of the reasons I’m obsessing with rocket is that I generally find it lasts better than baby spinach in the fridge and I love its pungent and peppery flavour. Rocket, also known as arugula, roquette or rucola is also part of the brassica or cruciferous family of vegetables, which also includes other pungent greens watercress, Brussel sprouts, kale and broccoli.

I also love rocket in really simple salad and sometimes I’ll keep it as easy as just rocket, extra virgin olive oil, salt and pepper. It’s a really great way to enjoy rocket and appreciate all of its flavours. This recipe adds in some feta and pine nuts which brings in some creaminess and some additional protein to keep you feeling fuller for longer.

What nutrients does the Rocket, Feta & Pine Nut Salad recipe contain?

Rocket is a great source of vitamin K and it also contains some calcium and vitamin C as well as traces of other vitamins, minerals and approximately 1-2g fibre per serving.

Using extra virgin olive oil in my Lemon Salad Dressing recipe is also a perfect boost of heart-healthy fats.

I don’t have pine nuts, can I substitute them for something else?

Yes absolutely. You can use any nuts that you have.

I usually make a batch of this salad to last for ⅔ days and the Lemon Juice salad dressing keeps it tasting fresh.

What is this recipe free from?

This recipe is gluten-free. If you would like to make this dairy-free, please replace the feta with a dairy-free option or leave it out altogether.

RECIPE METHOD

  • Place the rocket in a large bowl.
  • I usually add salad dressing to my greens at this stage before adding the other ingredients. I pour the dressing and use my hands to mix it thoroughly through the leaves. This is my absolute go-to salad dressing recipe, Lemon Juice EVOO Dressing.
  • Using a frying pan on medium heat, add the pine nuts and toast until lightly browned and then move to one side to cool.
  • Crumble the feta through the rocket and then add the pine nuts to serve.

Ingredients

  • 120 g rocket
  • 30 g feta
  • 2 tbsp pine nuts

Lemon Juice EVOO Dressing

  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 sprinkle salt & pepper

Instructions

  • Place the rocket in a large bowl.

    My daughter made this Salad last night to accompany leg of lamb roasted in the bbq and roast potatoes cooked in air fryer. Absolutely loved the Salad but as she couldn’t find pine nuts in the supermarket she substituted some mixed nuts. Needless to say this will be my favourite Salad and as I’ve always got pine nuts on hand, will be making it often.
