Lemon Roasted Brussels
Roasted Brussel sprouts, just like roasted cauliflower, are a game-changer and the Lemon Roasted Brussels are perfect to serve as a side dish or taste great added to salads.
Brussel sprouts are packed with nutrients!
Whilst Brussel sprouts are small in size, they are jam-packed with nutrients. One serving nearly meets the recommended daily intake of vitamin C, is an amazing source of vitamin K, folate and they’re also an excellent source of fibre.

Vitamin C – Essential for supporting immune health and supporting production of collagen.
Vitamin K – Supporting bone health and the process of blood clotting.
Fibre – Helps to keep a healthy gut environment, regulate bowel movements and lower cholesterol.
Lemon Roasted Brussels
Ingredients
- 15-20 Brussel sprouts
- 2 tbsp freshly squeezed lemon juice (approx ½ 1 small lemon)
- 1 tbsp lemon zest
- 2 tbsp extra virgin olive oil
- 2 tbsp pomegranate
- salt & pepper
Instructions
- Peel Brussel sprouts and slice into halves and place onto a baking tray.
- Pre-heat oven to 180 degrees.
- Add lemon juice and extra virgin olive oil to a cup and mix together thoroughly and add some salt & pepper.
- Pour lemon and extra virgin olive oil mixture over the Brussel sprouts and grate over some lemon zest.
- Place in the oven and turn occassionally during cooking and cook for 25 mins or until cooked and crispy.
- Serve with pomegranate.
