Extra Virgin Olive Oil has an abundance of health benefits.
Anti-Inflammatory – Research shows that EVOO improves inflammatory markers, for example, regular intake of EVOO showed a significant improvement in CRP levels.
Cardioprotective – EVOO significantly reduces the risk of cardiovascular disease and stroke. EVOO contains monounsaturated fats and phenolic compounds (antioxidants) which are proven to increase HDLs (good cholesterol) and reduce LDLs (bad cholesterol).
Neuroprotective – EVOO as part of a Mediterranean diet may improve cognitive performance and be protective for cognitive impairment and dementia.
Consumption of EVOO won’t make you gain weight – As with any well-balanced diet, it's all about input versus output and research shows that consumption of EVOO as part of a balanced diet will not cause weight gain.

Lemon juice is a good source of vitamin C and extra virgin olive oil contains heart-healthy monounsaturated and polyunsaturated fats.
I don’t have extra virgin olive oil, can I substitute it for something else?
You could substitute for olive oil, however, my best recommendation is to use a high-quality EVOO such as Cobram Estate for its health benefits.

RECIPE METHOD
- Freshly squeeze 1 tbsp lemon juice.

Love this dressing, we make it on repeat in our house.
Its one of my favourites too, just so quick and easy to throw over a salad 🙂
