Crispy Choc & Peanut Butter Protein Slice
Ingredients
- 1 cup soy protein crisps
- 2-3 rice cakes
- 2 servings vanilla protein powder (I used The Healthy Chef Vanilla protein)
- ½ cup peanut butter
- ¼ cup maple syrup
- 2-3 tbsp coconut oil
- 2-3 squares dark chocolate
- pinch of salt
Instructions
- Add peanut butter, maple syrup, melted coconut oil and pinch of salt and mix together thoroughly.
- Add vanilla protein powder and stir thoroughly through the wet ingredients.
- Add soy protein crisps and crumble rice cakes into small pieces and stir through the mixture.
- Mix thoroughly until all ingredients are mixed together.
- Line a loaf tin with baking paper, transfer the mixture into the tin, and press it down firmly until evenly packed - use your hands to press the mixture.
- Place mixture into the freezer for 20 minutes.
- Melt ⅔ squares of chocolate.
- Remove mixture from the freezer and remove from the loaf tin. Cut into slices, approx 12 slices, and drizzle with melted chocolate. Place into the fridge to set the chocolate.
- Store in an airtight container in the fridge and these will last in the fridge for up to one week.

For this recipe I used the Vanilla Organic Pea Protein by The Healthy Chef and I love the taste and texture of this one! Plant based proteins are a really good alternative to whey. They can be really helpful if you experience bloating or any intolerances or dietary requirements that avoid dairy.
