What nutrients does the High Protein Choc & Blueberry Muffin recipe contain?
This recipe is rich in nutrients and almond meal is a really good source of vitamin E, magnesium and fibre. Eggs are an excellent source choline, great for our liver and brain function and blueberries add a hit of vitamin c and some more antioxidants.
I don’t have almond meal/flour, can I substitute it for something else?
This recipe also works with ground oats/oat flour and I haven’t tried and tested anything else – let me know if you do in the comments below!
Is this recipe Low GI or GL?
Almond meal as the main ingredient is low GI and low GL.
Is this recipe Low FODMAP?
Almond and bananas are two ingredients that are higher in FODMAPs.
Can I use the High Protein Muffin recipe for my weekly meal prep?
Yes absolutely. These are perfect to cook in a batch and freeze.
What is this recipe free from?
This recipe is gluten free and I used dairy free choc chips too.
High Protein Choc & Blueberry Muffins
Ingredients
- 2 cups almond meal/flour
- 2 bananas
- 1 cup soy milk (I use light soy)
- 4 large eggs
- 2 servings chocolate protein powder (I love 4 scoops of Nuzest chocolate protein powder)
- 1 tsp baking soda
- 1-2 cups fresh or frozen blueberries
- 1 handful choc chips (I use Noshu sugar free choc chips)
Instructions
- Place all ingredients except the blueberries and chocolate chips into a blender and blend until a smooth mixture.
- Preheat oven to 180c / 360f.
- Pour the mixture into a non-stick muffin tray. If you think the mixture will stick, I recommend lining with baking paper or a light spray of extra virgin olive oil spray.
- Add the blueberries to the muffins - I usually do this separately so they are evenly distributed and sprinkle with a few choc chips.
- Place into the pre heated oven and cook for 20 minutes.
- Store in an airtight container for 2-3 days and these also freeze really well.
